Our pasture raised pork this year is from Berkshires, a heritage breed. This breed is known for their fine marbling and exceptional flavor. Our hogs are fed a varied diet including the plants and roots they find on pasture, a grain mix from our local feed store, and many types of vegetables from our farm. They are fed no animal by-products, hormones, or antibiotics. They have plenty of space, to root around and, well, just be pigs! All summer long they are out of doors munching on feed that gives them the best flavor imaginable. The combination of heritage breeds and pasture raising (vs. modern breeds and industrial production), produces pork like you remember; tasty, juicy, and flavorful.

Purchasing a half or whole share is an economical way to feed your family. Your meat comes from a family farm that carefully raises only a few animals each year. These animals are given the best care, fed the best food, and produce exceptional meat. They are processed at a local processor that we selected for their quality and service. They will custom cut to your specification with the same care that we raised your animal with.

Here's how it works:

You sign up for a half or whole share of a hog to be delivered in Late Summer, October or November 2012. Our hogs weigh between 240 and 260 lbs. live weight when they are sent to the processor.

Half Share Deposit – (75% of total = 130 lbs. * $2.60 * 75%)
                  $ 250.00

Full Share Deposit – (75% of total = 260 lbs. * $2.45 * 75%)
                  $ 475.00

At the time you sign up you make a deposit of 75% of the estimated cost of your pork. (For example, a full share would be:  $637 * 75% = $475.00.)  Once live weight has been determined (your hog is scaled at the processor when we deliver it for you) you will be invoiced for the balance.

The actual yield of what goes in your freezer is +/- 60% of live weight. So a 260 lb. live weight hog, will yield about 155 lbs of wrapped meat. This can vary somewhat, as each animal is different.  Your cutting choices will also make a difference. Meat for sausages and boneless roasts will weigh less because the bones have been removed.

The processor will call you and ask for your cutting instructions. They will be happy to help you out and tell you what your options are for cutting and packaging.

After your pork is custom cut and packaged, you can pick it up. The processor will charge you for their services at the time of pick-up. This is a separate expense from the cost of your meat. (Please call for an estimate of this cost.)  Extra processing, such as smoking hams and bacon, is extra and they will tell you that cost when you go over your cutting instructions.

It's that simple. If you have questions, please give us a call, 847-910-1160.
